Stuffed Pork Tenderloin

What You Will Need:

  • 1/2 block of cream cheese (approx. 4 ounces)
  • 3/4 cup of chopped spinach
  • 1 pork tenderloin
  • 2 tbsp of crushed peppercorn
  1. Preheat the oven to 360*F
  2. Cut fat off of the pork and butterfly (lengthwise) place clear plastic onto of pork and flatten with a meat tenderiser.
  3. Whip cream cheese until soft and spread in pork
  4. Then, spread spinach evenly on pork and cream cheese
  5. Roll up the pork and roll in the crushed pepper corn
  6. Use cooking twine to wrap the pork tenderloin
  7. Sear the pork in hot oil and place in the preheated oven
  8. Cooks for about 40-50 minutes (make sure to check appropriate internal temperatures!)
  9. Serve with a side such as a Broccoli Casserole
